MATCHA BOUNTY BARS

We are Viv & Sarah the sisters behind @ourhealthygrind. We only started our page late last year, so you could say we are the new kids on the block. We are so excited to share with you our raw green tea bounty bars. When that sweet tooth craving hits, these bounty bars will make the ultimate indulgence with far less guilt.
The best thing about them is that the don’t contain any of the additives normal bounty bars have & they are SIMPLE, EASY & QUICK to make. We hope you enjoy making these just as much as we did. INGREDIENTS:
- Makes roughly 10 small bounty bars.
- They are best consumed chilled so remember to keep them refrigerated!
Green Tea layer:
- 1 cup of organic dedicated coconut
- 1/2 low cup of fat coconut milk
- 2 tbsp of coconut oil
- 2 tbsp of honey
- 1 1/2 tsp of MIX N MATCHA
Vanilla layer:
- 1 cup of organic dedicated coconut
- 1/2 low cup of fat coconut milk
- 2 tbsp of coconut oil
- 2 tbsp of honey
- 1 tsp vanilla extract
Chocolate coating:
- 3 tbsp of cacao butter
- 2 tbsp cacao powder
- 1 1/2 tbsp honey
METHOD
Coconut filling:
1. Place all the ingredients for the green tea layer in a food processor & blend away until the filling looks like a consistent mixture. I like my bounty bars chunky & chewy rather than smooth & buttery, so I don’t process mine for too long. However, if that’s your thing process until desired. Once you’re happy place this layer in a bowl.
2. Repeat the same process for the vanilla layer using all the ingredients needed for this.
3. Once you have both layers ready – start by using the green tea layer & mould a rectangle shape using your hands. You want to make sure that this layer is about 1.5 cm in height only. Repeat this same process with the vanilla layer and place a 1.5cm layer on top of the green tea layer. Press both the layers firmly so they combine nicely. *tip: I used a cake spatula to press & shape them.
4. Line a tray with baking paper, place each bar & freeze for about 40 minutes or until firm!
Chocolate coating:
5. While you are waiting for the filling to set add all of the ingredients for the chocolate coating into a pot. On a low heat, Start whisking all of it together until it becomes smooth. Make sure you do not burn the chocolate.
6. Remove your bars from the freezer and dip each one into the chocolate coating mix. Dependent on how much chocolate you like you can dip the bar twice if desired.
7. Once fully covered, place the bars in the freezer for another 15 minutes & then your delicious bounty bars are ready for serving!!
