Despite containing a few ingredients, these matcha inspired nachos (or Matchos if you will) are so quick and easy to prepare. They’re great for a snack or even a grazing style dinner.
To keep vegan, we recommend serving with a cashew cheese or even a vegan sour cream. Alternatively you can serve with goats cheese or greek yoghurt mixed with a touch of lemon oil.
Ingredients
- 200 grams organic corn chips beans
- 1 tbsp olive oil
- 1 brown onion chopped
- 1/2 red capsicum chopped
- 2 tomatoes chopped
- 1-2 small red chillies finely chopped
- 1/2 tsp paprika
- 400 grams organic black beans (or adzuki beans)
- drain and rinse well Corn salsa
- 1 cob cooked corn ( to cook corn, place in a small amount of water in a heavy based pan. Place lid over pan and cook/steam on medium heat for approximately 5 minutes. Do not allow to boil dry. Add more water if required)
- 1/2 red capsicum chopped
- 2 shallots finely chopped
- 1 tomato (deseeded) chopped
- 1/4 cup fresh coriander leaves
- 1 tbsp fresh lime juice Guacamole
- 1 ripe avocado
- 1-2 tsp matcha powder
- 1 tbsp olive oil
- 1 tbsp lemon juice Salt and pepper to taste
Method
- Firstly, prepare the bean mix.

- Heat oil in heavy based pan and add onions.
- Braise over medium heat for approx. 5 minutes.
- Add capsicum and tomatoes, cook for a further 10 minutes.
- Then add remaining ingredients, reduce heat and cook a further 20 minutes, stirring occasionally.
- Add a little water if the mixture starts to look too dry.
- Allow to sit for up to 30 minutes for flavours to infuse.
- Meanwhile, prepare corn salsa.

- Cut corn off the cob and transfer to a small mixing bowl.
- Add remaining ingredients and gently mix.
- Prepare guacamole

- Simply combine all ingredients in a small bowl and mix by hand for a chunky texture, or blend for a smooth avocado dip.
- Arrange beans, corn salsa and guacamole on corn chips.
- Serve with Goat’s cheese, yogurt or cashew cheese and garnish with fresh coriander leaves.
