Ingredients:
- 400g Rockling fish fillet
- 1 teaspoon Golden Grind Latte Blend
- 1 clove of garlic crushed
- 2 tablespoons natural yoghurt
- 2 tablespoon palm sugar grated
- 2 tablespoon fish sauce
- 1 tablespoon olive oil
- Juice 1 lime
- Soba noodles
- Mixed vegetables e.g. Red pepper , snow peas carrot broccoli to stir fry
- Spring onions and julienne ginger to garnish
Method:
- Combine golden grind, crushed garlic, yoghurt, palm sugar, fish sauce, olive oil and lime juice in a bowl and mix well.
- Cut fish in to 4cm portions and add to the marinade, mix well, cover and refrigerate for 1 hour.
- Cook soba noodles to packet instructions refresh and set aside.
- Cut vegetable into slices for stir fry.
- In a fry pan put 1 tablespoon of olive oil and fry the fish for 2-3 minutes each side or until cooked through. Set aside. Then quickly fry the spring onions and ginger until crispy and set aside for garnish.
- Into a wok put 1 tablespoon of olive oil and quickly stir fry the mixed vegetables until just tender, add the noodles and toss to combine.
- Arrange the noodles and veg on a plate, top with the fish and crispy ginger and spring onions
- Serve with a wedge of lemon or lime.
