We teamed up with the team at Raw Beet to create this amazing delicious, raw, sugar free, vegan Golden Cheesecake. We also teamed up with the crew over at Eleven Labs to bring a serious treat. Deets below.
Ingredients:
Base
- 1 cup mixed nuts (almonds, cashews, macadamias)
- 1 cup medjool dates
- 2 Tbsp organic cacao powder
Filling
- 1.5 cup soaked cashews
- 1/2 cup coconut cream
- 1/2 cup desiccated coconut
- 1/2 cup coconut oil
- 3/4 cup organic rice malt syrup
- 2 Tbsp Golden Grind latte blend
Peanut Butter Choc Fudge
- 1 cup soaked dates
- 30 g p
- 1/2 cup Peanut butter
- 2 Tbsp organic cacao powder
Method:
Base
- Blend up the nuts and cacao until fine
- Add in your dates and blend until combined
- Press 1Tsp into your silicon moulds
Filling
- Add all ingredients into high speed blender
- Blend until ultra-creamy (Put aside whilst you make fudge)
Peanut butter choc fudge
- Place all ingredients into food processor
- Process until smooth
- Freeze for 20 minutes
Assembly
- Place a small piece of fudge onto base
- Pour and fill the mould with golden cream
- Repeat until all the mixture is gone
- Decorate any way you like
- Freeze for 3 to 4 hours (or overnight)
