There’s nothing more we love than seeing our matcha powder being used for all its awesomeness! We love that matcha is so versatile, can sit on the shelf for ages AND is super healthy, all at the same time. This recipe is from our amazing Matcha Maiden mate, Giovanna Tano, who may already know of from Instagram as @nourish.melbourne. Yep, she’s an absolute LEGEND when it comes to all things matcha and fitness! We love having her as part of the family and watching her killing it with her killer workouts using our BOOTEA BANDS along with her delicious and easy to follow recipes!
For those who don’t enjoy the taste of matcha or find the green tea taste too strong, these matcha blondies are the PERFECT way to ease yourself into the matcha-sphere. It combines the crowd favourite (blondies) with our favourite (matcha) into the most delicious go-to snack to pack in the lunch box for work, school or uni!
For first timers, this is also a great way to be introduced to matcha powder.
MATCHA MAIDEN BLONDIES

INGREDIENTS
- 1 pack of vegan white chocolate- Giovanna used ‘Sweet William’ which can be found at Coles!
- 1/3 cup of rice malt syrup
- 1 cup of plain flour
- 1/2 of almond meal
- 1 teaspoon of baking powder
- 4 table spoon of melted coconut oil
- 1/4 cup of almond milk (or your preferred milk)
- 1 tablespoon of Matcha Maiden matcha powder (yay!)
- pinch of salt
- 1 teaspoon of vanilla essence
METHOD
- Melt coconut oil, white chocolate and rice may syrup in a over a sauce pan with boiling water * (Giovanna used this method, but sometimes we just use the trusty old microwave)
- Add this melted mixture into a bowl with the flour, almond meal, baking powder and salt, and mix it all together
- Slowly add the almond milk then vanilla essence and lastly the Matcha Maiden powder
- Once mixture is well combined pour into a cake tray lined with baking paper
- Bake for around 35 minutes or until you can poke a fork in have it come out clean!
- ENJOY!
Drizzle some white choc on top for some extra fanciness!
*use the steam from the boiling water to melt the ingredients making sure that the bowl that you use to melt the ingredients in doesn’t touch the water itself- this will burn the chocolate! 🙁
