INGREDIENTS:

BASE

  • 80g macadamia nuts
  • 6 large dates
  • Pinch of salt
  • 1 tbs desiccated coconut

CAKE

  • 1 cup coconut cream
  • 1/3 cup coconut oil
  • 1/2 cup soaked cashews
  • 1-2 tsp matcha powder
  • Juice of 1/2 lime
  • 2 tbs honey or maple syrup

METHOD:

  1. Blitz all BASE ingredients until sticky crumbs form, then push into the base of a cake tin.
  2. Blitz all CAKE ingredients on high speed until smooth and creamy, then pour into your cake tin.
  3. Top with thin slices of lime, and set in the freezer for several hours or overnight in the fridge.
